Apricot Chicken

Ingredients
1.5 chicken breasts cubed1 whole Green Pepper diced1 tsp minced garlic1 Tbs olive oil1/2 cup apricot jam2 Tbs soy sauce1 Tbs sherry, cooking wine or chicken broth1/4 tsp ground ginger1/2 Cup cashews
Directions
Add the first 4 ingredients into a wok and saute until the chicken is cooked through. Next, add in the apricot jam, soy sauce, sherry/cooking wine/chicken broth, and ginger. You can also add other veggies that you may have in your fridge or garden.
At the end add in 1/2 cup cashews.
Serve over rice or chowmein noodles.
