Marinated Pork Roast

Ingredients
1-1 1/2 lb pork loin roast2 Tbs Canola Oil2 Tbs Red Wine Vinegar2 tsp Minced Garlic1 Spanish Onion Sliced1 Green Bell Pepper Sliced1 cup Bloody Mary Mix (or tomato Juice)1 tsp Dijon Mustard1 Tbs Sriracha (or hot sauce)1/2 cup water
Directions
Place the Pork Loin in a Plastic Zip-Top Bag. Mix Garlic, Oil, and Vinegar, and pour over meat. Close bag and refrigerate 8 hours or overnight. Remove Roast from Bag and discard marinade. Place roast in Crock Pot and top with remaining ingredients. Cook on high for 5-6 hours.
