Blue Chicken Double Salad

Ingredients
Blue Chicken Salad----------------------------2 cups Mixed greens (prefer spinach and arugula mix)3 oz. grilled chicken (leftovers from dinner work great!)1 tablespoon blue cheese crumblesMarinated Salad (This is what makes the dressing!)------------------------1 roma tomato1/2 a small pickling cucumber1/8 cup of diced onionsalt, pepper (to taste)1 tablespoon Cider Vinegar1 teaspoon olive oil
Directions
Place greens on plate, top with shredded chicken, and crumbled blue cheese.

In a small bowl mix together one chopped roma tomato, one 1/2 chopped small cucumber, one 1/8 cup of diced onion, 1 tablespoon of cider vinegar, and 1 teaspoon of olive oil. Salt and pepper to taste. Mix well.

Pour marinated salad over top the greens, chicken, and cheese. ENJOY!
