Lemon Jello Cucumber & Cottage Cheese Molded Salad

Ingredients
1 - 3 oz pkg lemon Jello1 cup hot water1 cup 1% milkfat Cottage Cheese1/2 cup fat free mayo1/8 tsp. ground black pepper1/2 tsp. salt1 cup finely chopped cucumber1 tsp. pimento (optional)1 tsp. minced onion1/4 cup chopped walnuts
Directions
Dissolve Jello in water, Cool
Add cottage cheese and beat well with egg beater.
Add mayo, cucumber, onion, nuts, pimento, salt and pepper; ble\nd well and pour into oiled 6 cup mold or 8x8 cake pan. Refrigerate until firm.
