Gorgonzola Beef on Wilted Spinach

3 garlic cloves2 pkgs or 1lb of fresh spinach1/2 c water1 tsp salt1 squeeze lemon juice1 pkg beef sukiyaki (or 1lb of other very thin cut beef)4 tbs Gorgonzola crumblessalt and pepper
1. Mince and saute the garlic cloves in a bit of oil over medium-high heat.
2. In the meantime, season the meat with salt and pepper and saute in a separate pan. Once cooked to your desired doneness, remove from heat and set aside.
3. Once the garlic is slightly browned, add all of the spinach, the water, and the salt. Cover and cook for 1-2 min, tossing occasionally with tongs, until all the spinach is just wilted. Remove from heat and add lemon juice.
4. Plate the spinach, put the meat on top, and sprinkle with Gorgonzola crumbles. Enjoy!
