Balsamic Chicken Sandwich

1.5 lbs of chicken, cut into strips or chunkssalt & pepper to taste3 cloves garlic, minced2 TB extra virgin olive oil1 cup low sodium chicken broth1/2 cup balsamic vinegar1/4 cup packed brown sugar1/4 cup whole wheat flour6 pieces Trader Joe's tuscan pane1 large tomato1/4 cup part-skim shredded mozzarella30 leaves basil
Sprinkle cut chicken with salt and pepper. Saute with garlic in olive oil until browned on both sides and garlic is fragrant (8-10 minutes). Add in broth, vinegar, and sugar. Bring to a boil. Then reduce heat, cover, and simmer 10-15 minutes, ensuring chicken is cooked. Add up to 1/4 cup whole wheat flour to thicken sauce a bit.
Put bread onto a cookie sheet. Top half of each piece with basil, tomato, chicken, and mozzarella. Bake at 350 until cheese is melted. Fold other half over to create a sandwich, or just pile on to eat with a knife and fork.
