Turkey Sausage Breakfast Hash

Onions, dicedGreen Peppers, dicedPotatoes, diced (small dice like the oniones and peppers)1/2 jar fire roasted red pepper1 medium yellow squash2 servings (2/3 c. each) turkey sausagechicken stock to saute instead of oil. Minced dried garlic (or fresh), salt and pepper to taste
Saute onions, green pepper and diced potatoes in chicken stock about 5 - 7 minutes. Add sausage and saute another 5-7 minutes. Add more stock as needed. Add diced red pepper and diced yellow squash and saute about 5 minutes or until squash is cooked but still firm. Serve as is or add a scrambled egg for a filling breakfast hash. Can also be served with a salad for a quick lunch. Freezes well in individual containers for a quick weekday breakfast.
