Leftover Chicken Breakfast Scramble

Ingredients
one large onion diced (1.5 cup)two medium potatoes w/skin left on shreddedfour large mushrooms chopped or sliced3 chicken thighs chopped (no skin) (from last nights dinner)2 cups egg beaters1/4 cup finely shredded cheddar cheese
Directions
Brown onions part way first.
Add your shredded potatoes next.
Cook for just a few minutes. Add mushrooms.
When mushrooms are nearly cookd, add your leftover chicken.
When everything is heated thru, add egg beaters. Stir in with ingredients and cover with a lid. When all is done, sprinkle cheese on top and cover with lid for a few minutes to melt.
Cut into 8 pieces, like a pizza pie.
