1/2 cup whole wheat flour1/2 cup all purpose flour16 cinnamon graham cracker squares1/4 teaspoon allspice1 teaspoon cinnamon3 teaspoons baking powder2 tablespoons unsweetened cocoa powder1/4 cup brown sugar2 large eggs1 1/2 cup buttermilk1 1/4 cup 1% milk1/4 cup unsalted butter1 cup fluff2 tablespoons boiling water1 1/2 cup mini marshmallows10 tablespoons chocolate chips
1. In a medium bowl, stir together the flour, graham cracker crumbs, baking powder, brown sugar, allspice, and cinnamon.
2. In a small bowl, beat the eggs with a fork and stir in the buttermilk, milk, and melted butter.
3. Stir the wet ingredients into the dry ingredients with a fork, mixing only until combined. There will be lumps in the batter. Do not overmix.
4. Heat a griddle or large frying pan over medium heat. Spray with cooking spray.
5. Fry the pancakes until bubbles form across the top and the edges look dry.
Marshmallow Sauce
Marshmallow Sauce
1 cup marshmallow Fluff
2 tablespoons boiling water
Stir Fluff and water together in a small bowl.
Drizzle over pancakes.
You can either add 1 tablespoon chocolate chips to each pancake, or sprinkle on top with the marshmallow sauce.
