Turkey Italian Sausage with Artichoke Hearts

Ingredients
1 lb turkey italian sausage1 cup fresh mushrooms1 Large red bell pepper1 T olive oil (I use smart balance)1/4 cup chicken broth
Directions
In skillet, cook turkey italian sausage. When turkey is 180 degrees with thermometer remove from heat. I often cook a few minutes on med-high and then add 1/4 cup chicken broth and cover for 7-10 minutes. Cut into bite size pieces.

Wash skillet and saute mushrooms, artichoke hearts, and red bell pepper until warm but still crisp. Add the other 1/4 cup chicken broth. Add contents of skillet and turkey italian sausage.

Makes 10, 1/2 cup servings

May sprinkle with parmesean cheese if desired.
