Crock Pot Lentil Stew

Ingredients
2 c. dry lentils, rinsed & sorted5 c. tomato juice1 14.5-oz. can stewed tomatoes1 medium onion, choppped2 medium carrots, sliced2 medium celery stalks, sliced3 cloves garlic, minced3 medium red potatoes, cubed (1/2-3/4")1 t. ground oreganoFreshly ground black pepper  & salt to taste1 t. hot pepper sauce
Directions
Place all ingredients in crock pot. Cook on low for 8 hours or high for 4 hours. Great served with a salad & whole grain bread.

    Both my husband and myself do like it. :) I use water instead of the tomato juice, canned diced tomatoes with green chilies, and for a different taste you might like to try sweet potato or butternut squash instead of the red potatoes. I don't care much for the celery (gas).. so I do without. - 9/23/09
