Heavy Whipping Cream, 1 cup, fluid (yields 2 cups whipped) Cream Cheese, 12 oz (remove)Jello Sugar Free Lemon Gelatin - small packageSplenda, 1.333 cupsIce Water, 1 cup (8 fl oz)Boiling Water, .333 cupKey Lime Juice, 1.25 cupsSugar free Coconut Syrup, 3 tbspGraham Crackers, 1 cracker (2-1/2" square)Reddi Whip, 18 tbsp
Whip cream until peaks, then set aside. Mix gelatin with boiling water until dissolved. Add ice water and refrigerate until partially set. Mix softened cream cheese with key lime juice, Splenda and coconut syrup until well-blended. Add thickened gelatin, blend well, then gently fold in whipped cream. Chill until set. Top with whipped cream and sprinkle crumbled graham cracker over top. Enjoy!
