Black Bean and Corn Salad with Avocado and Lime

Ingredients
salad:2 cans black beans, drained and rinsed1lb frozen sweet corn kernels10.5 oz package grape or cherry tomatoes, cut in half1 large orange bell pepper, diced small1/3 cup red onion, diced small1/2 cup fresh cilantro, chopped2 haas avocados, diced just before servingdressing:1/3 cup fresh squeezed lime juice1/4 cup extra virgin olive oil1 tsp salt1/8 tsp cayenne pepper1 clove garlic, pressed
Directions
In a large bowl, mix together all of the ingredients under "salad" except the avocados. No need to thaw the corn unless you plan to serve immediately (in which case you can just run the corn under cold water for a few minutes). In a small bowl, mix together ingredients for "dressing". Pour almost all of the dressing over the salad (reserving a few tablespoons). Put salad in refrigerator to let flavors come together and corn thaw. Just before serving, dice avocado and toss it with the reserved salad dressing (to keep it from browning). Top salad with diced avocado and serve!

This salad gets better as it sits, but avocado doesn't keep particularly well, so I always keep it separate and cut it as I serve. The salad is also good topped with grilled chicken!

    This is great. If you like cilantro at all, make sure to add that. I love the lime taste. I used green onions because that is what I had on hand...that was good too. - 12/31/11

    This is a great basic. I use scallions instead of red onion (milder). If you have a family member, like mine, who can't stand cilantro the salad is still fine with some basil and parsley instead. To some people cilantro tastes like soap--leave it out if you know they'll be eating this. - 8/22/11
