Pumpkin Oatmeal Walnut, Almond, Cranberry Cookies

Ingredients
Unbleached-all purpose flour, 1 cup Old Fashioned Quaker Oatmeal- Plain, 1 1/3 cup Wheat flour, 1 cup Baking Soda, 1 tspSalt, 3/4 tspCinnamon, ground, 1 tspNutmeg, ground, 1/4 tspGranulated Sugar, 1/2 cupBrown Sugar, 1/2 cup, packedApplesauce, unsweetened, 2/3 cupGrapeseed Oil, 1 Tsp. Molasses, 1 tbspPumpkin, canned, without salt, 1 cupVanilla Extract, 1 tspWalnuts, 1/2 cup, choppedAlmonds 1/2 cup, sliveredCranberries, dried, sweetened (craisins), 1/2 cup
Directions
Preheat oven to 350 degrees

Mix together: flour, oats, baking soda, salt, and spices.

In a separate bowl, mix together, sugar, applesauce, oil, molasses, pumpkin, vanilla until very well combined.

Add dry ingredients to wet in 3 batches, folding to combine, then fold in walnuts, almonds, and dried cranberries.

Drop by tablespoons onto cookie sheet covered with parchment paper; an inch apart. Flatten tops of cookie with fork or spoon. Bake for 18 - 20 minutes at 350 degrees.

Remove from oven; place cookies on a wire rack to cool..
