German Beef Rollups

10 very very think sirloin steaks sandwich style(approx 2 lbs) (You can use round steak but you will need to pound very thin. The sandwish sirlion strips works very well without the extra labor and the need to trim fat.) 6 dill pickle strips (25% reduced sodium are used to reduce the sodium count)(optional 5 strips of lean bacon - not in calorie count may be added.) 10 tps yellow mustard toothpicks 1/3 cup of flour (Wondra gravy flour works very well)
Take the steak and dip the back side with flour
smear the front of the steak with a yellow mustard
Cut the dill spears lengthwise into two pieces Take a dill spear and roll the steak with the spear in the middle (add 1/2 strip of bacon if fat is not an issue for you). Secure with a tooth pick and place in the a skillet and brown with olive oil.
After browning place the roll in a backing pan (do not layer) Sprinkle the remainder of the flour over the meat, and add approximate 1 cup of water. Add black pepper. (I do not add extra salt, but some people may want to, I recommend you do it after cooking to the gravy/sauce) Cover with Foil and place in the oven at 350 degrees.
Bake until the meat is the desired doneness - (we prefer well done so that the meat falls apart in the gravy and the pickle inside has become soft 1.5 to 2 hours)
These could be done in a crock pot, but they will probably be difficult to keep together for ease of portion control.
