Drunken Chicken

Ingredients
1.5 pounds chicken breasts1/2 bottle of beertomatoes canned with jalepenos1/4 cup olive oil4 cloves garlic, mincedchili pasteherbs to taste
Directions
Assemble all ingredients the night before so the chicken can marinate.
Place chicken in a crockpot. Pour beer, tomatoes and olive oil over chicken. Put garlic and a few squeezes of chili paste in. If you don't have chili paste, use crushed red pepper to taste. Use salt free herb mixture such as Mrs. Dash to taste.
Place crockpot in refrigerator overnight.
In the morning, plug in crockpot and cook on low for 10 hours. Shred chicken in the crockpot with a fork and mix. Serve over brown rice or on a roll. Leftovers are even tastier than the first round.
