Lite Potato Salad

Ingredients
2 med. russet potatoes cleaned, chopped, leave the skins on1 large egg1/4 c Light Mayo2 tbsp Dijon mustard2 tbsp dill pickle relish
Directions
Boil 2 chopped med. russet potatoes w/ skins, until you can stick with a fork and it flakes away. Boil 1 egg, cool and peel, chop. Cool the potatoes before adding the chopped egg.

Combine egg, potatoes, mayo, mustard and relish. Chill for an hour.
