Ingredients
Salad 2-3 cups chopped or shredded red cabbage2-3 cups chopped or shredded green cabbage2 carrots peeled and shredded or shaved (I've done both)2 scallions, both white and green parts, white parts chopped, green parts sliced thinlyDressing 3 Tbs rice vinegar1 tsp sugar2 Tsp sesame oil, I sometimes add a little extra1/2 tsp saltToppings 1/4-1/2 cup crushed peanuts1/2 package dry ramen noodles, any flavor b/c you're just using the noodles, toss the flavor pack out
Directions
Combine all your veggies in a large bowl. Combine vinegar, sugar, and salt in a small bowl and whisk in the oil slowly. Sesame oil sticks to the bowl so you might want to use a rubber spatula to scrape the bowl into the veggie mixture. Toss the dressing into the vegetables and coat well. You might want to add some extra oil. Add the nuts and noodles right before serving. Cheap and vegan. Yay.
