Quinoa Salad with Feta

Ingredients
4 cups chicken broth2 cups dry uncooked quinoa1 cup feta crumbles1 pint grape tomatoes, halved1 med. cucumber, diced5 oz. grated carrots 1/3 cup Ken's Light Balsamic Vinaigrette
Directions
Bring the chicken broth to a boil in a medium saucepan. Add quinoa, remove from heat and cover. Let sit for 15 minutes, or until quinoa is tender. Chill in refrigerator until cool. Add grape tomatoes, cucumber, carrots, feta and dressing. Toss until evenly coated.
