Ingredients
Directions
2 lb extra lean ground beef8 oz part skim shredded Mozzarella Cheese4 oz Medium Cheddar Cheese15 oz can Black Beans2 Tbsp La Victoria Green Taco Sauce1 medium onion, chopped3 cloves of garlic, peeled and minced20 oz bag Mission Tortilla Rounds
Brown the ground beef in a skillet with your preferred seasonings. I use oregano, cilantro and chili powder. Because the beef I use is extremely lean, I saute the onions and garlic with the meat. If there is any grease, drain the meat.
Add black beans drained and taco sauce to the meat mixture.
If I am feeding small people, I place the ingredients separately on their plates and let them mix or not. (The three year-olds in my family does not like her food to "touch".)
For adults, layer the chips, meat and cheese on a foil-lined pan. Place in a hot oven just until the cheese is melted.
Serve with additional chopped onion, tomatoes and guacamole for guests to add.
Serving Size: Serves 12 for dinner, more for snacking
