Whole grain zucchini bread

3 cups whole grain flour1 teaspoon salt1 teaspoon baking soda1 teaspoon baking powder3 teaspoons ground cinnamon2 eggs1 cup vegetable oil1 cup sugar3 teaspoons vanilla extract2 cups grated zucchini (about 2 medium zucchini)1/4 cup water (if the zucchini are dry)
Grease and flour 1 large cake pan. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl.
Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini until well combined. If your zucchini was dry, you may need to add water. It should be the consistancy of cake batter.
Pour batter into prepared pan.
Bake for 40 to 60 minutes. Cool in pan on rack for 20+ minutes.
Serving Size: Makes 16 rectangle slices
