Light breakfast casserole

Ingredients
* 2 cups (8 oz.) shredded cheddar cheese * 3 cartons (4 oz. each) cholesterol-free egg product or 6 large eggs, well beaten * 1 can (12 fl. oz.) Evaporated Fat Free Milk * 1 teaspoon salt (optional) * 1/2 teaspoon ground black pepper * 1 pkg. (30 oz.) frozen shredded hash brown potatoes * 1 medium onion, chopped * 1 small green bell pepper, chopped * 10 slices turkey bacon, cooked and chopped, or 1 cup diced ham
Directions
PREHEAT oven to 350° F. Grease 13 x 9-inch baking dish.

COMBINE cheese, egg product, evaporated milk, salt and black pepper in large bowl. Saute onion and pepper until soft. Add potatoes, onion, bell pepper and bacon, mix well. Pour mixture into prepared baking dish.

BAKE for 60 to 65 minutes or until set.

    This recipe is great! It's very easy to throw together the night before and pop it in the oven in the morning. I used Fat Free cheese and extra lean ham and it brought the nutrition to: Calories - 160, Fat - 2g, Carb - 19g, Protein - 16g. - 1/31/08

    I appreciate the lower fat/cholesterol emphasis. We also used sodium reduced t. bacon and Morton Lite salt. Hashbrown bkfast casseroles have not always been a favorite, but this worked for me! - 9/27/14

    Easy to make, and everyone enjoyed it! I added some old bay seasoning to the top of the casserole after it was cooked for some additional flavor. Also, I generally don't like egg beaters, but I did use them for the entire recipe, and no one could tell. =) - 4/5/09

    I make this similar recipe using reduced fat cheese and combination of egg and egg whites since egg beaters tend to have a un natural taste thanks for sharing - 10/14/08
