Chicken & Brocolli Casserole

Ingredients
4 boneless, skinless chicken breasts4 cans cream-of-mushroom soup (98% fat free)3-5 Brocolli crowns/stalks, chopped2 cups Shredded cheese (reduced fat)2 cups sliced mushrooms1 yellow onion, sliced1 cup milk (1%)1 pkg. croutons (your choice)margarine or butterlemon juicesalt & pepper (to taste)rice or pasta (optional)
Directions
Preheat oven to 350 degrees. Cook chicken thoroughly in butter or margarine; add salt and pepper to taste. Cut cooked chicken into cubes. Saute sliced onion and mushrooms in margarine; and salt and pepper to taste. In a large bowl, combine cream-of-mushroom soup, chicken, onion & mushrooms, milk, and a splash of lemon juice. Mix well. Layer greased casserole dish with chopped brocolli. Pour chicken/soup mixture over brocolli. Top with cheese. Bake for approximately 30 minutes. Remove casserole from oven and add croutons to top. Bake an additional 5-10 minutes or until croutons are slightly golden. Cool for 10 minutes and serve. Serve over rice or pasta (**optional - not included in nutritional info**)
