Crunchy Quinoa Salad

Ingredients
1/4 cup Lime Juice1/4 tsp White Pepper1/4 tsp Black Pepper1/4 cup Diced Marinated Jalapeno Peppers1/4 tsp Salt1/4 cup Olive Oil3 cups Water1 1/2 cup Quinoa3/4 cup Peeled, Sliced, Diced Cucumber3/4 cup Diced Tomato3/4 cup Red Bell Pepper1/4 cup Yellow Bell Pepper1/4 cup Diced Onion1/4 cup Parsley
Directions
1. Make a vinaigrette using lime juice, white pepper, black pepper, jalapeno peppers, salt and olive oil.

2. Cook Quinoa, make sure not to over cook.

3. Mix the quinoa with the cucumber, tomato, onion, bell peppers and then add vinaigrette.

Serve at room temperature or cold.
