One Dish meals Roast Chicken (Lite)

Ingredients
potatoes 3 med. cut in halfcarrots 6 med. cut long in halfonions 2 med. quateredbroccoli 6 fresh spears (1 bunch cut long)celery 1 c. choppedchicken 2 thighs/ 2 breast (skinless)lite Itialian dressing 8 Tbsp.water 1 c.foil
Directions
1) Preheat oven to 350 degrees
2) Prep veggies & set aside
3) Place chicken in 13 x 9 oven/pan(thawed/fresh)
arrange veggies in dish around chicken in an apealing fashion.
4) Pour dressing on chicken.
5) Completely cover with foil to retain moisture.
check at 30 mins for dry dish (only if dish is dry)remove from oven, add 1/2 c. warm water from tap replace cover, put back in oven to finish cooking.
Chicken is done when meat will fork off the bone at touch.

    This was really good! I didn't have the Italian dressing so I substituted with Rosemary Balsamic vinegrette. The family loved the flavor it added to the chicken. I hadn't thought of using a salad dressing on the chicken. It opens a whole new world! Thanks!! - 3/4/09
