Simple & Hearty 16 bean soup

Ingredients
Water, tap, 6 cup 16-bean soup mix, dry, 1 cup Onions, raw, 1 medium Garlic, 4 cloves Celery, raw, 4 stalk, largeCarrots, raw, 3 large Potato, raw, 3 small Salt, 1.5 tsp Olive Oil, 2 Tbsp
Directions
Put beans in pot with water and salt. Bring to boil, reduce temp so it maintains a low boil but doesn't boil over.

While beans are boiling chop vegetables. Once all vegetables are chopped add them to the pot, add more water if needed at this time and also add in the olive oil, cover.

Cook at medium-high for just about an hour stirring every so often. Once it starts to thicken, broth will no longer be clear, bring the temp down to medium or just above medium.

Optional, add other spices like red pepper or black pepper, or anything else spice wise that you like.
