Yeast-Free Cinnamon Rolls

Ingredients

Directions
Dough
Take out a large bowl and place 3/4 cup of cottage cheese, 1/3 cup milk, 1/4 cup of sugar, two oz. of butter, and one tsp. of vanilla extract. Mix together and then scoop in to a food processor. Blend for 10 seconds. Add two cups of flour, 1/4 tsp. of baking soda, 1/2 tsp. of salt, and one tbsp. of baking powder to your food processor. Process until you have a dough. Knead the dough for two minutes and then spread out into a rectangular shape. Brush the dough with a little bit of butter.

Filling
In a small bowl combine 3/4 cup of brown sugar, 1/4 cup of sugar, two tsp. of cinnamon, and one tbsp. of melted butter. Once combined, spoon over the rectangular dough. Use the back of the spoon to press the mixture a little bit in to the dough. Roll up the dough from one end to the other. Do this by beginning with the longer side, otherwise your rolls will be too fat to handle. Cut the dough into individual rolls (14-15) Place the cinnamon rolls in a round cake pan so that they are touching. Cook them for 25 minutes at 400 degrees F. They should be slightly brown on the top.

Icing
While the dough and filling are baking, you can make the icing for the top of the cinnamon rolls. Wash your small bowl and add one cup of powdered sugar to it. Then add two tbsp. of milk, one tbsp. of butter, and 1/4 tsp. of vanilla extract. Mix until combined. When the dough is done baking you will want to give it a few minutes to cool down. It doesn't have to cool all the way, however. Spoon the icing on top of each of the cinnamon rolls. Serve warm or at room temperature.
