Avocado Key Lime Ice Cream

Ingredients
3/4 cup unsweetened coconut milk (from carton or diluted from a can) 1/2 avocado juice from 1/2 lime or 1 key lime 1/2 tsp vanilla 1 packet stevia 1 tsp nutritional yeast pinch of sea salt 1/2 tsp xanthan gum 1/2 tsp guar gum 15 ice cubesDirections: Blend everything together except for the ice. Once well blended, add your ice cubes and continue blending until smooth and creamy. Top with unsweetened shredded coconut.
Directions
Puree all ingredients except ice in food processor or blender (I used my magic bullet.) Add in ice a few cubes at a time and blend/puree until creamy and thick.

Top with shredded coconut and sugar-free chocolate chips!
