Banana Loaf

Ingredients
1/2 cup Crisco vegetable shortening1 cup sugar2 eggs1 tsp vanilla extract1 cup mashed banana (about 2 bananas)1 tsp lemon juice2 cups flour3 tsp baking powder1/2 tsp salt
Directions
Pre-heat oven to 350F.
Cream sugar and Crisco thoroughly.
Beat together eggs and vanilla.
Add egg mixture and beat until light and fluffy.
Add mashed bananas and lemon juice; beat into creamed mixture.
Combine dry ingredients and mix quickly into creamed mixture.
Pour into loaf pan and bake about 65 minutes.
Invert onto a wire rack after somewhat cool, about 15 minutes. Cut only when completely cool to avoid the loaf falling apart.

Serving Size: makes 1 loaf pan, approximately 24 half-slices
