Chile Rubbed Fish (Tilapia)

3 teaspoons chili powder 1 teaspoon Ancho chili powder (if you don't have, use more regular chile powder instead) 2 tablespoons lime juice 2 tablespoons extra-virgin olive oil 1 teaspoon ground cumin 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon salt 1/2 teaspoon freshly ground pepper 1 pounds Tilapia, 1/2-3/4 inch thick, skinned and cut into 4 portions (if using George foreman grill like I did, you'll need to cut it into slightly smaller portions)
Preparation
To prepare fish: Combine chili powder, Ancho chili powder (if using), lime juice, oil, cumin, onion powder, garlic power, salt and pepper in a small bowl. Rub spice mix rub all over fish. Let stand 20 to 30 minutes for the fish to absorb the flavor.
Preheat grill/grill pan (I used my George Foreman grill) to medium-high.
Oil the grill rack or use a grilling basket on grill, or spray grill pan/GF grill with olive oil spray. Grill the fish until it is cooked through and easily flakes with a fork, 3 to 5 minutes per side. Transfer the fish to a platter. (or use in tacos which is where this recipe originally came from)
Is especially delightful with a squeeze of lime juice over it.
Serving Size: is a 4 oz serving of fish - recipe makes 4 servings
