Whole Wheat Sweet Potato Pancakes

1.75 c whole wheat flou4 tsp baking powder1 tsp cinnamonpinch nutmeg2 c nonfat milk3 Tbsp canola oil1/2 cup egg substitute1 sweet potato, cooked, peeled and pureed (about 1.5 c)
Mix dry ingredients together in a bowl, and wet ingredients together in a separate bowl. Pour wet ingredients into dry, and whisk until smooth. Drop by 1/4 c onto hot griddle. Cook in batches in skillet on medium-high until bubbles form on surface, then turn over and cook until golden brown.
3 pancakes per serving.
Serve with bananas, other fruit, or syrup.
