Mediterranean Quinoa Salad for One

Ingredients
1/4 c quinoa, rinsed thoroughly (you can use 1/2c cooked if you have it)1 oz RF Feta, crumbled1/2 c cherry tomatoes, halved1/2 c peppers, chopped2 tbsp red onion, diced1-2 radishes, sliced1 tsp olive oil2-3 tsp red wine vinegar (to taste)OreganoBlack pepper
Directions
Prepare quinoa according to the package (I use the 1: 1.5 method- cook for 30-35 minutes).

Mix all ingredients, oregano, pepper and vinegar to taste.

Serving Size: Makes 1 serving
