Ingredients
• Boneless Skinless Chicken Tenderloins (Frozen), 16 oz • 3 Color Fingerling Potatoes, 1 cup • Onions, raw, .5 cup, chopped • Green Peppers (bell peppers), 0.5 cup, chopped • Chicken Broth, 2 cup (8 fl oz) • Bay Leaf, 1 tbsp, crumbled • Capers, canned, 1 tbsp, drained • *Tomatoes, red, ripe, raw, year round average, 1 cup, chopped or sliced • Salt, 1 tbsp • Pepper, black, .5 tbsp • Garlic, 2 clove • Cilantro, raw, 3 tbsp
Directions
If cooking on a crock pot- add all ingredients and cook on low for 6 to 8 hours.

On the stove top, start by boiling the potatoes for about 5 minutes, then add all the ingredients. Simmer for about 50 minutes or until chicken is tender.
