Quinoa and Two Bean Salad

Ingredients
Salad1 1/2 c. fresh or frozen cut green beans1 1/3 c. water3/4 c. uncooked quinoa, rinsed, well drained1 can cannelini (white) beans, drained and rinsed1/4 c. sliced green onions (4 medium)4 leaf lettuce leavesDressing3 T. lemon juice2 T. olive oil1 T. chopped fresh or 1 t. dried basil leaves1 clove garlic, finely chopped1/2 t. red pepper sauce
Directions
In 2-quart saucepan, add water and quinoa. Heat to boiling. Reduce heat; simmer for 10 minutes, add green beans, return mixture to a simmer and cook until green beans are just tender, about 3 minutes, drain and place in a large mixing bowl.

Add Cannelini (white) beans and onions to quinoa mixture. At this point you can cover and refrigerate to serve later.

Meanwhile, in small jar with tight-fitting lid, place dressing ingredients; shake well. Refrigerate dressing until ready to serve.

Just before serving, pour dressing over salad; toss gently to coat. Serve on lettuce-lined plates.
