Rumbamel's Spanish Rice

Ingredients
-1 bag Success Boil in the Bag Brown rice, uncooked-5/8 C of a 14.5 oz diced tomatoes with green chiles (pured, if desired)-5/8 C of a 14.5 oz diced tomatoes, (pured, if desired)-1/4 C finely chopped onions, I use white-1 clove fresh garlic, minced-2 oz carrots, diced-1/2 C 99% Fat Free chicken broth, I use Aldi's brand
Directions
--I pureed my tomatoes first, mostly because my son doesn't like chunks of tomato, but you can do whatever you like.

--Mix all ingredients in a large microwave safe bowl (I use a 3 Qt. glass one) and stir well. Microwave on high for 10-13 minutes until rice and carrots are done. Stir well. I served it with drained and rinsed black beans and pan seared turkey polish sausage (neither are listed in the nutrition).

--Makes 9 servings of 1/2 C each.
