Layered Eggplant Hamburger Casserole--1 serving=1/8 of dish

Ingredients
2 small or 1 large eggplant, about two pounds total1 1/2 large onions, thinly sliced1 lb. lean ground beef or chuck1 bell pepper, chopped2 cloves garlic, chopped2 cups fresh tomato, chopped1 Tbsp. dried or 3 Tbsp. fresh basil1 tsp. dried Italian herbs1/2 cup dry bread crumbs1/2 cup grated Parmesan cheese
Directions
Slice unpeeled eggplant into 1/4' slices and set aside.
Brown ground beef; drain and set aside.
Finely chop the garlic and saute it with bell pepper. Add the browned ground beef, chopped fresh tomato, basil, and Italian herbs. Bring it to a simmer. Lightly grease a 9" x 13" casserole dish. Place a single layer of eggplant slices in the bottom of the dish. Place over it half of the meat sauce, then a layer of sliced onions. Sprinkle over it half of the bread crumbs. Then layer again with eggplant, meat sauce, onion slices, and the rest of the bread crumbs. Sprinkle the parmesan cheese over all. Cover and bake for 1 hour at 350 degrees; then remove the cover and bake another 10-15 minutes.

    Very good, however I would change a few things. I would chop the onion rather than the thin rounds. I would double or maybe triple the garlic, and I would add a can of diced tomatoes in addition to the fresh tomatoes. - 8/30/17
