Minestrone Soup

Ingredients
Stewed Tomatoes, Canned, No salt, 1.75 Cup (14.5 oz can)Light Red Kidney Beans 1.75 cup (15 oz can)Carrots, raw, 4 medium Celery, raw, 2 stalk, large (11"-12" long) Onions, raw, .5 large Butter, unsalted, 4 tbspGarlic, minced, 2 clovesCabbage, fresh, 1 cup, shreddedParsley, dried, 1 tbsp Vegetable broth, 4 cupsWater, tap, 1 cup (8 fl oz)Macaroni, whole-wheat, 3/4 cup elbow shapedSalt and pepper to taste
Directions
1. Melt butter or margarine in a heavy pot over medium heat. Add onion, celery, and carrots; saute for a few minutes.
2. Add beans, cabbage, tomatoes, beef broth, garlic, and parsley. Bring to a boil, cover, and reduce heat. Simmer for approximately 1 hour until vegetables are barely tender.
3. Add pasta, and simmer for 30 minutes more. Salt and pepper to taste.
