Ingredients
2 large eggs - beaten until mixed thoroughly1 Tbsp olive oil1 large mushroom - sliced or diced1 thick slice of onion - chopped1 clove of garlic - minced1 Italian tomato, diced
Directions
Heat the olive oil in a non-stick pan. Add onion, saute until clear. Add mushroom and garlic, cooking until mushroom is soft. Add beaten eggs - cooking as an omelet until eggs are set on top. Flip over and place tomatoes on top if you want them hot. As soon as the bottom is gently browned, slide onto a plate. If you want cold tomatoes, add them now.

Serving Size: Makes one large omelet - can be shared~
