Banana Crunch Muffins

Muffins2 c flour1 c quick oats1 tsp baking powder1 tsp baking soda1/2 c granulated sugar5 medium mashed bananas (about 1 1/3 c)1 c unsweetened applesauce1 c plain nonfat yogurt4 egg whites1 tsp vanilla extractCrunch topping1/2 cup of unpacked brown sugar1/2 cup of chopped walnuts
Mix dry ingredients in a bowl and set aside. Whisk together bananas, applesauce, eggs, yogurt, and vanilla extract. Gradually mix in flour mixture. Place batter in greased (use cooking spray) muffin tins. Mix together the brown sugar and walnuts for the crumb topping. Sprinkle the topping on each muffin. Bake at 350 for approximately 27-30 minutes. Insert a toothpick and make sure it comes out clean. Cool on wire rack.
