Tortellini Soup

Garlic Chicken breast (6 oz.)Chicken brothWaterWhole Wheat TortelliniFresh spinach
Heat a dutch oven over medium-high heat. Pour a bit of olive oil in the bottom, and sauté the garlic and chicken breast (cut into 3/4" pieces) until the chicken is no longer pink on the outside, but not completely done. Scoop out chicken and set aside.
Add mushrooms (sliced) to the pan and cook until tender, about 3 minutes. Carefully add in water and chicken broth, and bring to a boil. Add in tortellini and chicken pieces and return to a boil. Lower heat and simmer (covered) for 7-9 minutes, stirring occasionally. Last, add in the spinach (ripped into small pieces). Enjoy!
