Ground Turkey Enchiladas

Ingredients
1 lb. lean gound turkey1 pkg. taco seasoning3/4 cup shredded colby jack cheese8 corn tortillas1 can enchilada sauce
Directions
Pre-heat oven to 375
Lightly spray baking dish
Brown, crumble and drain ground turkey.
Add taco seasoning according to package directions
Add 1/8 of meat mixture and 1 tsp cheese to center of a corn tortilla, roll and place in baking dish with edge down
When all tortillas are in the dish, cover with enchilada sauce and remaining cheese.
Bake at 375 for 15-20 minutes until warm through.

Serve warm with a small side salad.
