Vegetable Quiche

Ingredients
1 prepared puff-pastry shell (round)1 package feta cheese (125g)6 egg whites5 whole eggs1/3 of a large yellow bell pepper, seeded and finely diced1/2 of a medium red bell pepper, seeded and finely diced1 small red onion, finely diced1 small scallion, finely sliced3/4 cup shredded radicchio1 small, spicy chili pepper, chopped (with seeds)1 1/2 teaspoon of mixed, dried herbes de provence (thyme, lavender, oregano, marjoram etc)pinch of salt (very little as the feta will already add saltiness)
Directions
Pre-heat oven to 350.
Place puff pastry in a regular pie shell.
Mix eggs and egg whites until blended.
Crumble the feta into the bottom of the puff pastry.
Layer the veggies on top.
Sprinkle with dried herbs and pinch of salt.
Pour the egg mixture over everything and give the pie plate a little shake to settle it.
Bake approximately 20 mins - until fully cooked (the center is stable when shaken and crust is lightly browned).

Serving Size: 12 servings per quiche (for a breakfast portion)
