Cool Summer Barley Salad

Ingredients
1 cup barley, pearled, raw2 cups boiling water1 can yellow corn, kernels, drained and rinsed1 can black beans, drained and rinsed1/4 cup red onion, chopped6 cherry tomatoes, cut in halfDressing:2 Tbsp. canola oil3 Tbsp. cider vinegar1/4 cup honey3 Tbsp. spicy mustard
Directions
Cook barley in boiling water per package instructions. Cool and rinse. Add remaining ingredients. Prepare the dressing ingredients in a blender. Pour dressing on barley combo and gently toss. Enjoy!
