Ackee and Saltfish

Ingredients
Ackee, Grace, Onions, raw, Red Ripe Tomatoes, 1 plum tomato Pepper, black, Jalapeno Peppers, *bacalao, Coconut Oil, .
Directions
Soak the bacalao (saltfish) overnight if possible to get rid of the salt. If not possible, boil the saltfish in water for 10 minutes, drain, taste. If still salty, boil again.

Chop onion, tomato and pepper and saute in oil until onions are translucent

drain and break saltfish into small pieces, add to saute pan, season with black pepper- DO NOT ADD ANY SALT

drain ackee and add to saute pan, let saute for 10 minutes
