4 medium ripe tomatos, diced0.5 cup tomato sauce (sugar-free)2 tbsp fresh oregano, finely chopped2 tbsp fresh rosemary, finely chopped2 tbsp fresh thyme, finely chopped2 bay leaves0.5 tsp olive oilA dash of saltA dash of pepper
Makes six (6) 0.5 cup servings.
Chop tomatoes and herbs. Combine all ingredients in small saucepan and bring to a simmer. Simmer for at least 20 minutes, stirring frequently. Remove bay leaves.
Serve over pasta, meat, or vegetables.
