2 pounds light white flesh fish1/2 cup dried bread crumbs4 tablespoons grated parmesan cheeseEgg whites from 4 eggsCooking spraySalt & pepper to taste
Preheat oven to 500 degrees F. Mix bread crumbs, parmesan, salt, and pepper in large shallow container. Place egg whites in medium size bowl. Dip fish in egg whites and let excess drain. Place fish on bread crumb mixture and coat both sides thoroughly. Place on baking sheet coated with non-stic spray. Spray top of fish lightly with cooking spray. Bake fo 30 minutes or until breading is golden brown, serve immediately.
