Nick's Apple Salsa

Ingredients
2 Whole Granny Smith's Apples1/2 Medium white onion1 Anaheim Chili pepper1 Jalapeno pepper3 Tbsp/1 fl oz Lime juice1 Tbsp Distilled white vinegar2 Tbsp Cilantro, rough chopped2 Tsp fresh grated ginger1/4 Tsp Kosher salt
Directions
Cut, core and small (1/4”) dice the apples
Deseed jalapeno and Anaheim chili and small dice (1/4”) them
Small dice the onion
Mix all ingredients in a bowl
Refrigerate let stand for at least 2 hours (the longer the better)
