asparagus & pepper calzone

1 cup chopped fresh asparagus2 cloves Garlic1 cup chopped tomato1 chopped yellow bell pepper1 cup chopped onion1/2 tbsp extra virgin olive oil 1 teaspoon parsley1 teaspoon oregano 1 teaspoon basil3/4 cup mozzarella cheese1/4 cup cheddar cheese1 fat free pilsbury french loaf
Saute veggies spices in olive oil until tinder; drain. Unroll french bread and place on pan. Put half the cheese onto half of the loaf; pour veggie mixture on top of cheese; top with remaining cheese. Roll bread to shape calzone. Bake at 400* for 20 to 25 min until crust is brown.

YUM! I made this as written & we LOVED IT. It was so filling & delicious & can be changed with seasonal veggies. I had a little trouble with rolling out the dough. I also sprinkled a little organic corn meal down before rolling to help with not sticking. Served with some marinara sauce for dipping. - 8/7/14
