Mushroom Potatoe Veggie Brown Rice

*Potatoe (1 Med size Potatoe), 4 serving (remove)*Trader Joe's Brown Basmati rice (dry), 1 cup (remove)*Can of Amy's Cream of Mushroom Soup (remove)*Half a bag of Trader Joe’s Harvest Hodgepodge, 1.75 cup (remove)curry powderpeppersea saltgarlic powderall to taste
1.Peel and dice potatoes, boil water and add potatoes cook for 8-10 minutes. 2. Boil water for rice and cook rice per package instruction. 3.Remove potatoes, drain potatoes and place in stir fry pan season with curry powder, sea salt, pepper to taste and then additionally add Hodge Podge veggies (or veggies on hand like shredded/ diced carrots, mushrooms, baby corn etc). 4.Once everything in stir fry pan is cooked to your desire add cooked rice and can of cream of mushroom and cook for 5-8 minutes on medium stirring occasionally. 5.Serve!!! Goes great with a side of kale. =)
