marinated vegetables

Ingredients
1 lb sweet potatoes peeled and sliced thin2 lg. zuchini quartered then halved2 med. onions quarteredMarinade:2 tbs olive or grapeseed oil3 basil cubes2 tbs minced garlic2 tbs red wine2 tbs lime juice1 tbs each sweet paprika / grilled chicken seasoningsalt and pepper to taste
Directions
mix well ingredients for marinade then combine with cut vegetables. Place in Zip-Loc or well sealed container. Let marinate for a few hours, turning to coat occasionally. Bake at 180C for 45 minutes.
